Directions
  1. Fry lightly the chopped onion in olive oil.
  2. Add the chopped potatoes and carrots.
  3. Cover with water and add salt.
  4. Boil until they are tender.
  5. Remove from the heat and let cool down.
  6. Add a teaspoon of sweet Spanish paprika.
  7. Mince and strain.
