Instructions
Fry the mackerels
First cut the mackerels in slices
Season with salt. Flour the slices.
Fry the mackerel slices in olive oil.
Escabeche
Warm up 2 glasses of olive oil in a frying pan.
Add a tablespoon of sweet Spanish paprika and stir. The oil must be not too hot to avoid burning the paprika.
Let the olive oil cool down and add 1 glass of vinegar. Stir.
Cut the bay leaves into pieces and fillet the cloves.
Finishing the dish
In a clay pot put a layer of pieces of cloves and bay leaves. Next a layer of mackerel slices. Repeat until there are no more ingredients left.
Pour the mixture of olive oil, paprika and vinegar into the pot.
Let settle, at least, for 12 hours.
