Supongo que todos nosotros, o por lo menos la mayor\u00eda, pensamos eso de nuestras madres. En mi caso es cierto; de hecho mi marido piensa lo mismo. Aunque todo le sal\u00eda muy bien, una de las cosas que bordaba era el caldo de grelos que ya era espeso y sab\u00eda a \u00abviejo\u00bb en el momento en que terminaba de hacerlo.<\/span><\/span><div class=\"wprm-spacer\"><\/div>\n<span class=\"p1\" style=\"display: block;\"><span class=\"s1\">Mi madre siempre hac\u00eda el caldo de grelos (o nabizas si no era temporada de grelos), nunca, que yo recuerde, lo hizo de repollo y no estoy muy segura en cuanto a las berzas. Los otros ingredientes eran las habas, que pon\u00eda a remojar la noche anterior, las patatas y, por supuesto, un trozo de unto. Para los que no sep\u00e1is lo que es, el unto es la grasa que cubre las tripas del cerdo que se ahuma y se deja enranciar. En casa, un caldo sin unto no era caldo.<\/span><\/span><div class=\"wprm-spacer\"><\/div>\n<span class=\"p1\" style=\"display: block;\"><span class=\"s1\">Mi madre nunca utilizaba solamente agua para hacer el caldo. Siempre utilizaba el caldo colado que resultaba de hacer el cocido; cocido que siempre llevaba lac\u00f3n, chorizos y ternera y, casi siempre, costilla, tocino, oreja\u2026 Resultaba, por lo tanto, un caldo muy sustancioso y contundente, hasta tal punto que muchas veces era plato \u00fanico en la mesa.<\/span><\/span><div class=\"wprm-spacer\"><\/div>\n<span class=\"p1\" style=\"display: block;\"><span class=\"s1\">Esta es la receta del caldo de grelos seg\u00fan lo hac\u00eda ella. De hecho, las fotos de la galer\u00eda, por cuya calidad pedimos disculpas, corresponden a un v\u00eddeo casero de mi madre haciendo el caldo.<\/span><\/span><div class=\"wprm-spacer\"><\/div>\n<span class=\"p3\" style=\"display: block;\"><span class=\"s2\">Una advertencia: mi madre siempre cocinaba a ojo, as\u00ed que no es posible saber las cantidades exacta de lo que utilizaba. Las que aparecen aqu\u00ed las calcul\u00e9 yo, tambi\u00e9n a ojo, a medida que iba viendo el v\u00eddeo. Y tambi\u00e9n a ojo calcul\u00e9 el n\u00famero de comensales, teniendo en cuenta las siguientes variables: el tama\u00f1o de la pota, que ella estaba acostumbrada a cocinar para ocho personas y siempre sobraba y que en el momento de hacer el v\u00eddeo ya no \u00e9ramos tantos en casa.<\/span><\/span><\/div><\/div>\n<div class=\"wprm-spacer\"><\/div>\n<div class=\"wprm-recipe-block-container As\u00ed no se cortaba su cocci\u00f3n.<\/div><\/li><li id=\"wprm-recipe-743-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Pelaba y lavaba las patatas. Las cortaba muy menudas, como para tortilla, y las dejaba en agua hasta el momento de echarlas en el caldo para que no se pusiesen negras.<\/div><\/li><li id=\"wprm-recipe-743-step-0-6\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">Mientras, echaba las habas y el unto al caldo hirviendo y dejaba que cociesen hasta que empezasen a abrir y romperse.<\/div><\/li><li id=\"wprm-recipe-743-step-0-7\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\" style=\"margin-bottom: 5px;\">En ese momento echaba primero las patatas y luego los grelos, dejando cocer todo junto hasta que estuviesen tiernos.
