Instructions
Brush the cod with extra virgin olive oil and place it in an ovenproof skillet.
Bake for 15-20 minutes at 180ºC.
Meanwhile, brown the sliced garlic cloves and chilli, without seeds, in 3 tablespoons of olive oil.
Add a splash of white wine vinegar.
Remove the cod from the oven, where it will have released its natural gelatin, and pour the garlic sauce on top.
Remove the cod fillets to a plate and reserve.
Bind the sauce, over low heat, with the help of a fine mesh strainer.
Plate the cod and cover with the sauce.
