Instructions
Salt the quails and put them in a pot.
Top with the garlic, onion and peppers, all chopped, and the parsley.
Add the saffron, white wine, olive oil and vinegar. Move the pot to mix the ingredients.
Let it rest in the refrigerator for 24 hours, moving from time to time.
The next day, preheat the oven to 200ºC
Place the quail in a baking dish with a little of the marinade.
Bake for 15 to 20 minutes.
Meanwhile, brown the potatoes, cut into cubes, and cook the marinade.
Once golden, add the potatoes to the marinade and cook everything together.
Serve the quail with the garnish of potatoes and marinade.
