Pour plenty of water into a big pot. Add 2 laurel leaves and 2 or 3 tablespoons of sea salt and bring to a boil.
If the spider crab is alive, place it into the pot while the water is cold so it doesn’t drop the legs. If it is dead place it when the water is boiling and begin to count the time when the water starts to boil again.
When the water begins to boil, cook for 10 to 15 minutes (depending on the size).
Drain and serve cold, chopped and with the broth in the shell.
