Instructions
Chop the leeks and sauté them, over low heat, in extra virgin olive oil.
Once sautéed, add the chopped potatoes and 1 liter of chicken and ham stock. Salt.
Bring to a boil and cook until the potatoes are tender.
Let cool, crush and strain.
