Instructions
Clean and chop the onion, the red pepper and the carrot.
Clean the rabbit, putting aside the liver and kidneys (clean the fat of the kidneys), and chop it.
Put the vegetables and the rabbit on a baking dish. Season.
Pour half a glasswine of white wine and two or three tablespoons of extra virgin olive oil.
Cook in the oven (220ºC). Halfway through the cooking time turn over the pieces of rabbit and add the liver and kidneys.
At the end, punt under the hot grill on both sides.
