Ingredients

  • 200 g cod
  • 2 clove garlic
  • 1 chilli
  • 1 trickle vinegar white wine
  • 3 tbsp olive oil extra virgin

Step by step instructions

  • Brush the cod with extra virgin olive oil and place it in an ovenproof skillet.
  • Bake for 15-20 minutes at 180ºC.
  • Meanwhile, brown the sliced garlic cloves and chilli, without seeds, in 3 tablespoons of olive oil.
  • Add a splash of white wine vinegar.
  • Remove the cod from the oven, where it will have released its natural gelatin, and pour the garlic sauce on top.
  • Remove the cod fillets to a plate and reserve.
  • Bind the sauce, over low heat, with the help of a fine mesh strainer.
  • Plate the cod and cover with the sauce.
