Ingredients

  • 8 quail clean
  • ½ onion
  • 2 green pepper
  • 1 red pepper
  • 2 clove garlic
  • 1 paper saffron
  • 1 glass white wine
  • ½ glass vinegar
  • ½ glass olive oil
  • parsley
  • salt
  • 400 g potato

Step by step instructions

  • Salt the quails and put them in a pot.
  • Top with the garlic, onion and peppers, all chopped, and the parsley.
  • Add the saffron, white wine, olive oil and vinegar. Move the pot to mix the ingredients.
  • Let it rest in the refrigerator for 24 hours, moving from time to time.
  • The next day, preheat the oven to 200ºC
  • Place the quail in a baking dish with a little of the marinade.
  • Bake for 15 to 20 minutes.
  • Meanwhile, brown the potatoes, cut into cubes, and cook the marinade.
  • Once golden, add the potatoes to the marinade and cook everything together.
  • Serve the quail with the garnish of potatoes and marinade.
