  • 1000 g hake in fillets
  • 1000 g tomatoes
  • ½ onion
  • 2 cloves garlic
  • 1 cup white wine
  • 1 shot brandy
  • 200 g Serrano ham
  • olive oil
  • salt

Step by step instructions

  • Preheat the oven to 180ºC
  • In a frying pan with oil, sauté the finely chopped garlic and onion.
  • Then add the peeled and crushed tomatoes. Sauté for a few minutes.
  • Add the wine and cognac. Cook for 8 to 10 minutes.
  • Meanwhile, spread a oven dish with oil, place the seasoned hake fillets, sprinkle them with a splash of white wine and put in the oven.
  • Add the ham cut into small cubes to the sauce and cook for 3-5 minutes.
  • After 10 minutes in the oven, remove the hake and pour the sauce over it.
  • Bake again for 5-7 minutes.
