Ingredients

  • 400 g lentils pardinas
  • 1 chorizo sliced or diced
  • 100 g Serrano ham in small cubes
  • 2 clove garlic optional
  • ½ medium onion finely chopped
  • 3 tbsp olive oil
  • 1 glass white wine
  • 1 tbsp vinegar (optional)
  • water
  • salt

Step by step instructions

  • Heat 2 or 3 tablespoons of olive oil in a pot and brown lightly the onion and garlic cloves, finely chopped.
  • Next, add the chorizo and serrano ham and fry lightly for 1 or 2 minutes.
  • Add the wine, the lentils and water until cover them completely and a bit more because their volume will grow while cooking.
  • Add salt and a shot glass of vinegar (optional) and simmer until the lentils are tender.
