Curried rice with vegetables

Ingredients

  • 240 g rice
  • 50 g onion finely chopped
  • 3 young garlic finely chopped
  • 1 carrot finely chopped
  • 5 mushroom chopped
  • 1 tomato crunch
  • 1 tsp sugar
  • salt
  • curry powder
  • 3 tbsp olive oil
  • 750 g water

Step by step instructions

  • Heat the olive oil in a paella pan or deep frying pan to fry lightly the vegetables.
  • Add the vegetables one by one, waiting a minute or two before adding the next, in this order: onion, young garlics, carrot, green beans and mushrooms.
  • Srpinkle the grated tomato with a pinch of sugar and the same amout of salt, and add to the paella pan. Cover and let cook gently all together for around 3 to 5 minutes.
  • Add the rice and fry gently for a minute or two, pour the water, season with salt and curry to taste and let boil.
  • Once it starts to boil, cook for 17 to 20 minutes.
  • When it is ready, let settle, covered, for 5 minutes.
