  • 700 ml meat broth
  • 5 egg
  • 200 g flour
  • salt

Step by step instructions

  • Put all the ingredients, except for the pork fat, into a bowl and whisk until the batter is smooth and all the flour has been incorporated.
  • Set the batter aside to rest for 1 hour.
  • Heat the pan over a medium heat and grease the bottom with pork fat. Using a ladle, pour batter into the pan and swirl it around.
  • When done on one side (when it comes off the pan), turn the pan over and let it cook on the other side.
  • Remove from the pan to a cloth to remove excess fat and not moisten the dish with excessive heat.
  • Move to a plate. Repeat this operation until the batter is finished.
