A simple but very tasty recipe. The flavor is given by the cockles since their broth is what is used to cook hake.
It is more normal to make hake with clams, but I like cockles better, they are tastier. They taste more of the sea.

Ingredients

  • 4 slices hake
  • 1 clove garlic
  • 1 onion small
  • 200 g cockle
  • ½ glass white wine
  • water
  • salt
  • olive oil
  • parsley chopped

Step by step instructions

  • Wash the cockles well and leave them in salted water for a few hours to release the sand.
  • Put the water to heat in a saucepan and open the cockles in it.
  • Once open, remove and reserve.
  • Filter the resulting broth and reserve as well.
  • In a paella-type pan or in a clay pot, brown the finely chopped onion and garlic in olive oil.
  • When they are ready, add the broth resulting from open the cockles and the wine. Let it cook for a few minutes.
  • Season the hake and add it. Cook on both sides until done.
  • Add the cockles and a little chopped parsley.
