Ingredients

  • 1 red pepper
  • 1 green pepper
  • 2 clove garlic
  • ½ onion
  • ½ zucchini
  • 2 tomatoes
  • 1 leaf bay
  • 1 tbsp sweet paprika
  • salt
  • olive oil

Step by step instructions

  • To prepare the ratatouille, cut the vegetables into cubes and poach them in olive oil, first the hardest ones (onions, peppers and garlic) and then the zucchini.
  • Once poached, add the bay leaf, the tomatoes, peeled and cut into cubes, and the spoonful of sweet paprika.
  • Cover the pot and let it cook for 20 minutes.
  • It is usually served with fried eggs.
