  • 180 g water
  • 20 g extra virgin olive oil
  • 15 g yeast fresh
  • 350 g strong flour
  • 10 g salt

Step by step instructions

  • Add the water, the oil and yeast into the mixing bowl and set 90 secs / 40º C / speed 3
  • Add the strong flour and the salt. Set 2 mins / bread mode.
  • Place the dough onto a floured surface. Knead for 5 minutes by hand.
  • Shape the dough to form a cottage loaf, dust with flour and make some cuts on the top.
  • Paint the cocotte with olive oil, place the dough inside and put the lid on.
  • Place the cocotte in the cold oven, without preheating and bake for 45 minutes.
  • After 40 minutes uncover the cocotte and bake for another 5 minutes.
  • Remove from the oven and leave cool on a wire rack.
