  • 1 rabbit
  • 1 carrot
  • 1 red pepper
  • 1 onion

Step by step instructions

  • Clean and chop the onion, the red pepper and the carrot.
  • Clean the rabbit, putting aside the liver and kidneys (clean the fat of the kidneys), and chop it.
  • Put the vegetables and the rabbit on a baking dish. Season.
  • Pour half a glasswine of white wine and two or three tablespoons of extra virgin olive oil.
  • Cook in the oven (220ºC). Halfway through the cooking time turn over the pieces of rabbit and add the liver and kidneys.
  • At the end, punt under the hot grill on both sides.
